Sweet or savoury?

The savoury specialities of Provence are a festival of flavours. Fish, meat or vegetable-based dishes all ooze the tastes of the Mediterranean… You won’t want to leave a crumb!
The unmissable dishes of Provence:
Bouillabaisse: this hearty Provençal fish soup served with garlic croutons and rouille sauce is the icon of Mediterranean cuisine.
Ratatouille: the perfect dish to get all the vitamins you need, made from summer vegetables such as tomatoes, aubergines, and peppers. This dish can be eaten hot or cold.
Aïoli: a creamy sauce made with garlic and olive oil. This sauce goes perfectly with the vegetables and fish of Provence.

Provence is bursting with sweet treats that have been popular with foodies for centuries! In Grimaud, it’s impossible to resist the temptation from these specialities:
– The famous 13 Christmas desserts: an assortment of walnuts, dried figs, almonds, sultanas, watermelon, orange, dates and the famous pompe à l’huile (olive oil brioche). Each guest must taste all the desserts to honour the Christmas dinner tradition.
– The Brioche des Rois (King’s brioche): for Epiphany in January, a delicious brioche with orange blossom, decorated with candied fruit and with a hidden lucky charm inside for the chosen king or queen of the day!
– The Tarte Tropézienne: this is the star of pastries in Provence. This brioche with a secret cream filling is an absolute must for anyone visiting the region.

How about an aperitif?

The aperitif in Provence is the moment of the day when the wonderful hospitality and flavours of the south of France come together! Out on the sunny terraces, it’s time to treat yourselves to some specialities of Provence, to share (or not!) with friends.

A typical regional aperitif includes:
– Tapenade or anchoïade, creamy dips made from olives, anchovies and aromatic herbs. Perfect served in generous proportions on croutons.
– Pissaladière, with caramelised onions and anchovies, is an unmissable speciality pizza, a delight with every bite!
– Rosé wine, produced in sunny Provence, is the perfect accompaniment for these specialities, adding a little touch of freshness.

The recipe for (authentic) ratatouille

Ingredients:
– 2 aubergines
– 2 courgettes
– 2 peppers (red and green)
– 4 ripe tomatoes
– 1 large onion
– 2 cloves of garlic
– 1 bouquet garni (thyme, laurel)
– Olive oil
– Salt, pepper

Preparing the vegetables:
Cut the aubergines and courgettes into slices or little cubes, remove the seeds from the peppers and cut them into slices, peel and chop the onion and crush the garlic, chop the tomatoes into little pieces.

Cooking the vegetables:
Heat some olive oil in a large pan.
Fry the aubergines for 5 to 7 minutes until they are slightly golden.
Add the courgettes and fry.
Add more olive oil if necessary, then add the peppers and fry until soft.
In the same pan, add the chopped onion and fry on a low heat until it becomes translucent.
Add the crushed garlic and leave to cook a minute longer.
Add the chopped tomatoes and leave to simmer for 10 minutes, until the tomatoes release their juices and blend in with the rest of the vegetables.
Add the bouquet garni (thyme, laurel), season with salt and pepper and mix well.
Leave to simmer on a low heat for around 30 to 40 minutes, stirring occasionally. The vegetables should be soft but not reduced to a puree!

Good to know

In Provence, the local dishes are perfectly paired with a chilled glass of rosé, ideal for sunny days.

There are also local red and white wines that can be served with your meals.

And for a pre-dinner drink, it’s hard to find something more characteristic of Provence than pastis! And how about a drop of thyme liqueur to finish the meal on a high note.

*Alcohol to be consumed in moderation.

To take a bit of Provence back home, there’s nothing better than local olive oil, Provence mixed herbs, olive tapenade or anchoïade.

Aix calissons, a sweet treat made from almonds, make a great gourmet gift.

Nougat, biscuits such as Marseille navettes, and the authentic and fragrant Marseille soap are also some unmissable local products you could take back home with you.
